Cabbage Casserole

Cabbage Casserole
The pictures are for making a double batch but the instruction are for a single batch. When making yours it will be a lot less.


Ingredients
1 head of cabbage 
1 bag carrots
1 pound ground beef
1 can diced tomatoes
1 can tomato soup


Instruction
Fry ground beef and drain.
Cut cabbage into small pieces.

Cut Carrots


  Layer large roaster with approx. 
 1/2 of the cabbage and 1/2 of the carrot,

 1 can diced tomatoes

1/2 meat mixture



  1 can tomato soup


Then layer remaining meat mixture,
 cabbage, carrot and another tomato soup on top.






Salt & pepper to taste.

 Cover and bake at 375 for about 1 1/2 hours. 



 Stir occasionally.


 Casserole shrinks during baking. Enjoy!

Taco Ring

To make this, you'll need:
2 crescent roll tubes
1 LB ground beef (or ground turkey)
 1 packet of taco seasoning
1 1/2 cups grated cheddar cheese
Optional:
Olives
Mushrooms

Instructions

Lay out the two tubes of crescent pastry, thick sides in on foil. Use some of the left over crescent rolls to to make the center a bit thicker. 
Brown beef and add taco seasoning. 


Add in some cheese., mushroom or black olives. Anything you would like. I do.



Lay beef in a circle on the inside of the laid out crescent rolls.

Add cheese to the top.


Pull over crescent rolls and tuck in under meat and cheese. 


You can sprinkle some cheese on the top if you so desire too.



Follow cook time on the pack of crescent rolls, and once it's done, you're good to go.
Add cheese, lettuce, tomato, black olives, sour cream or whatever you desire for your tacos, in the middle. I sometimes just like to make a small salad to have with it.

Easy, cheap, and yummy!

An update on things going on in my Life

I have been super busy lately with going to see my counselor and going to group every week. I am also taking on tasks around the house that, years ago, I would have never thought possible to do. I am also trying to maintain two blogs and writing in two separate journals. I have also been trying to make time to read and study a book by Albert Garner entitled "Defense of the Faith. I have also been working on a scrapbook of old pictures of me from when I was a baby to the age about 21. I have been remodeling things inside and out of my house. I go to church every Sunday morning and evening and also on Wednesday evenings for bible study.

With all that I have going on you would think I am to busy to enjoy life, but to tell the truth, I love it. I guess i worry that people will think that because I am fat that I sit around all day on my butt and do nothing. If i am to be truthful, years ago that is who I was. I am no longer that fat little girl who everyone picked on and said was to fat to do anything. Yes, I am still fat but oh well. Like I tell the ladies in group, if I spend all my time worrying about being fat and losing a pound here or there then that dampens my life. I am out in the world now and having a great time meeting new people and see new things.

I was just going to write a short paragraph about things going on but when I get to typing my fingers don't want to stop. I have been asked to be the clown for church so i will post pictures of me when that happens...lol I also plan to post pictures of all the remodeling AI have been doing. I have also gotten into planting flowers again this year so I may post about that too. 

My days are being filled with things that make me happy and I am trying to makes others happy while doing it. I have been getting a lot of compliments in group from the ladies. I am being told that I am inspiring some of them and I must say they have been such a blessing to me. I have met a few that are going to college and are older then me and it is helping me to get over my fears so I may one day go as well. I would love so much to go back to school. The  ladies in my group say they know I will do great and that I am smart. My low self imagine doesn't see it that way.

 I guess that is enough ramblings for today. One little paragraph turns into a whole page...lol God Bless.

My Thoughts on a New Counselor and My fears

Well I am trying out the new layout for blogger and it seems to be much nicer then the old one. I have been learning over the past couple of years that change can be a good thing. I have been going to see the same counselor for about 2 1/2 years. For reason, I do not know, he left and I was placed with a new counselor. My new counselor is now moving on to better things so once again I will get another new counselor. Through it all from one to the next I have learn that change can be a good thing. 

I use to hate change. I would stay at home and never do anything out or my norm. I have been getting better at not being afraid of change and learning to embrace it with a happy outlook. I have seen that each counselor had their own things to teach me and own knacks for getting to the point I am now. I am looking forward to this new counselor and what all she can help me with. I have already met her because she helps run the weekly group I go too.

 One day I may be able to walk out my front door with no fears at all, that day for me will be awesome. I look back on how I use to be. I could not even sit on my front porch with out being afraid. I can now walk out the door and down the street. I can get on a bus and go all over town. I can sit next to a stranger on the bus and not be afraid they will harm me. I still have those fears from time to time but they don't stop me like they use too. 

My growing faith in the Lord has helped me greatly. Knowing, in my heart,  that He always looks out for me has been a major part in over coming my fears.Each day is a new challenge and a challenge I am now learning I can over come.

Peach Cobbler


Peach Cobbler

Melt 1 stick of butter in a 8x12 baking dish

Mix:
1 cup sugar
1 1/2 teaspoons backing powder
1 cup flour
1/4 teaspoons salt
3/4 cup milk

Pour this mixture over the top of the melted butter.
DO NOT STIR!

On top of that mixture pour:
2 3/4 cups peaches/2 small cans or 1 large can

1 cup sugar
1 cup juice- peach ,or the juice of the fruit you are using

bake 45 minutes at 350 degrees.batter comes to the top and browns.Any fruit can be used in this recipe

Poem

My son had an assignment in school that required him to write 9 poems for class. He asked me to read them sometime and when I did I got a wonderful surprise. He wrote one of the poems about me. I just have to share it. He did a wonderful job on it.


MOM
My mom is cool
She swims in a pool
She loves me so
At least I think so
Just kidding she loves me
She loves me with glee
She always makes me happy
Even when she’s all sappy
She always knows what to say
She always says it on the right day
My mom is the very best
Even though she doesn’t wear a vest

Another Night at Group

I went to another group meeting last night.I had a very good time. We made collages of who we are. I want to post mine and explain it so I can come back and see it and remember this good group meeting.

The adult with a kid inside him is how I feel about myself. I always feel that I am a scared little kid inside and adult body. I chose a Gecko because I love frogs and I couldn't find a frog in the magazines so I figured he would do...lol. Plus he is a cute little guy. This is a picture of pumpkin bread. Those who know me know that I bake a lot of pumpkin bread. Coolaid is my nick name. My brother gave me this name after seeing me in a bright red shirt. He said I looked like the Koolaid man...lol.



I have had the name ever since. This is a picture of potatoes. I love potatoes. I Love potato soup, baked potatoes, fried potatoes, tater tots, french fries, hash browns. If it is made with potatoes I would eat it. I love kids. I use to watch kids and I miss it. Kids can be so much fun to be around. They keep you on your toes..lol This shows some pictures and a camera because I love to take pictures. I am told all the time that I take to many pictures but I cant help it, I like doing it. These next two pictures are of the beach and a light house. I took a trip to Myrtle Beach South Carolina two years ago. I loved it there and I had a great time. I got to see a light house up close and it is one of my greatest memories of going. This picture is a guy in a costume. My friends like to cox me into putting on funny hats. I dress up for Halloween and once my friends put a jack-o-lantern face on my T-shirt and I walked around all day with it on. The Blue and white clock was the only thing I could find that was blue and white. I love to collect blue and white things.



They are so beautiful. This last one is of a smiley face. I love to smile. This is pretty much what I could come up with in that short little bit if time in group.

Random Stuff

Here are some more random picture I have taken.



I was on a trip to Kentucky and caught this wonderful picture.




I saw this sign every time I traveled to Kentucky and I finally got a good picture of it.


Every time I would see it I would giggle.

One night my son and husband came home and they ran in and said grab your camera.
I came out and found a tree frog on my house .



I went to the Clabber Girl Museum with my mother.


This is a mural on the wall there.



On the same trip my Mother and I were walking and saw this plaque.


I liked what it said so I took the picture so I could remember it.



My friend Michelle went to see the ocean and send me this box in the mail.



When I opened the box I found a frog in sand.


I love it and it stays on my desk so i cant see it all the timeMy friend Beth came in one day and again I am told to grab my camera.


Outside was the biggest moth any of us had seen.


If you can see her, my cat is on the fence trying to get it






It was a pretty good size moth. I have never seen one that big before.
